This Vegan with a Vengeance recipe made my breakfast yesterday morning. Since I was only cooking for myself (and no one else will eat tofu), I made 1/3 of the recipe and cooked it in a loaf pan. It made a really big omelet. I started out with half, but then went back for the whole thing, it was so good! The brand of tofu I bought had a weird taste and texture to it and I could taste it a little, but with ketchup it was good. Next time I'll use different tofu and it'll be perfect.

I don't care for tofu. I never liked eggs to begin with. That said... this thing looks amazing! I want to eat it. I wish I liked tofu.
